When we buy crowns, could we set a date to when the crowns are given to the account?

No. Crowns appear on the account immediately. If you'd like to give Crowns as a gift at a later date, you can use Prepaid cards or Gift Certificates - see https://www.wizard101.com/game/gift-cards for more information and options
