There is no quest to fight them. Those kinds of bosses are optional bosses, which can be fought at any time. For some bosses, you'll have to raelly look around the areas to find them (the majority of them are found in dungeons like tree of life).
Some optional bosses like gurtok demon and runed devastator can often drop unique items like pets.
