All the schools from Gubb Guardian exist in the game. However, Astral magic is only available to wizards who have progressed sufficiently far into the story. Once you get to Celestia, you start learning about Astral magic and it has additional expansions in Zafaria, Azteca, and the Arcanum. These do involve some (fairly minimal) side questing, but it is well worth it in my opinion.
