I am trying to beat DS in a short amount of time. Lets say i play 3 hours a day and 21 hours a week. Would i finish DS before a week is up?

That sounds about right if you skip sides. I would say it'll probably take a day or two longer possibly, depending on how quickly you clear some dungeons and also depending on some of the collect quests, they can take a while sometimes.
